Thanks TM Mistral I discovered such a wonderful product like wild rice. Unfortunately, it is not common here as in the West. There have long appreciated the health benefits. The Americans often add wild rice in a wide range of pastries and especially the bread, enriching it with vitamins and minerals.
One of the secrets of wild rice is that it can not pre-boil. I soaked the rice in 200 ml of cool water and left for 12 hours. He opened up and became soft. Surfaced and unopened seeds I removed. The water is not drained! Thus, all the vitamins are preserved!
Knead the dough, combining all ingredients except cranberries and pine nuts. Again, wild rice is sent into the dough along with the water in which it was steeped. So the remaining water in the dough - 100 g (total 300). At the end of the kneading, when the dough has become elastic enough, add the cranberries and nuts. If the dough seems watery - add a little more flour if it is very dense - water.
Cover the dough and allow to rise in a warm place (1 hour), then make alminco (folding several times) and give more time to rest the dough 2 times.
Coming up we spread the dough on the work surface (it is better to make molding on a greased baking paper, and then I was worn out with the transfer of the workpiece). Form a ball, press it.
