The number of ingredients listed on two full loaves! So, inadvertantly, I became the owner of a coconut. About a week he languished in the fridge, waiting in the wings, until I came across this wonderful recipe from an interesting American site. The recipe interested me immediately because it was required and coconut milk and shavings, in General, zero-waste business. Left to disintegrate!
I won't beat around the Bush, properly cut nut "walnut" helped me this recipe! Thanks to the author!) http://www.povarenok.ru/recipes/show/56491 Now we have both the coconut milk and shavings! There are a couple of trivia.
You can proceed to the main part. In a warm coconut milk dissolve the yeast, tablespoon of sugar, add the flour, knead the dough. Put in a warm place for 15-20 minutes.
In approaching the dough add eggs, salt, sugar and half flour (about 250g) stir the mixture. Now by parts add the butter at room temperature, ie add - kneaded, another part of oil - knead. Pour the remaining flour (125g) and kneaded. You may need more flour, but don't overdo it! Better to grease your hands with oil, so it was easier to work with the dough. The dough should be smooth and soft, a bit sticky! Cover with a towel and leave to come.
While the dough rises, make filling. In a separate bowl, mix the butter at room temperature, two tablespoons sugar, and coconut flakes.
Coming up we spread the dough on a work surface, divide in two, roll out. The dough is soft, pleasant to work, with loud cheeps rolling under a rolling pin! On the dough spread the filling.
Next, the dough is rolled into a roll and with a knife or scraper cut in half.
Twist the two parts together and form a loop. With the second layer you can do the same, but you can roll cut into small buns and bake a batch in the muffin tin or on the baking sheet.
Curls laid in a form, leave for proofing for 20 minutes with milk or egg. Bake 200* for 35-40 minutes. If during baking the top will burn and the middle is still not baked, cover the loaf with parchment paper or foil.
Take out the finished product, allow to cool and enjoy! A little epilogue: I baked this bread twice. First time purchase with coconut milk and shavings, the second time with homemade. The second option I liked more, I think you can guess why!) Do not be lazy, the result is worth it.
