Citrus cheesecake with cherries
Easy to prepare cheesecake with the addition of citrus zest and cherry sauce!

Ingredients

  • Cookies

    150 g

  • Butter

    100 g

  • Lemon

    1 piece

  • Lime

    1 piece

  • Orange

    1 piece

  • Cream cheese

    200 g

  • Powdered sugar

    30 g

  • Cream

    200 ml

  • Cherry

    1 cup

  • Sugar

    2 Tbsp

  • Potato starch

    1 tsp

  • Cognac

    50 ml

  • Lemon peel

    1 Tbsp

  • Mint

    2 sprig

Cooking

Grind shortbread cookies in a blender.

Melt the butter and mix it with our baby cookie.

Lay the based in form. Previously having spread parchment! Press the glass to the desired thickness of the layer (1 cm). Put in oven heated to 170-180 for 10 min!

Grate the zest of lemon, orange, lime and add to bowl with cream cheese! Mix thoroughly!

To our mixture add the citrus juice ( about 2 tbsp each) to taste! (don't overdo it with the acid)!!! Add the powdered sugar and whipped cream. Mix all until a homogeneous mass!

Fill the cake form with the mixture and put into the fridge (or freezer) until tight consistency!

Take the cherries (I used frozen) and on a dry skillet warmed her. Add the sugar ( try what flavour you want more sour or more sweet)

Take the cognac (it is IMPORTANT that the frying pan was hot or the alcohol will not burn) add to the pan and carefully ignite! Evaporate until the flame goes out!

Add the remaining zest, mint leaves. In a small quantity of water diluted starch and little by little added while stirring continuously until desired consistency!!! Constantly try the sauce what flavor you want!

Get our dessert from the fridge... carefully remove the form. Strain the sauce and decorate our dish!
