I've never baked pies from coconut milk. Decided to catch up. It was very tasty, yum. However, instead of gooseberries will next time with fresh strawberries. I think will be even tastier. (I'm just not a fan of gooseberries).

1. For the test it is necessary to mix the flour and baking powder in a large bowl. Add the sugar, vanilla sugar, 1 egg yolk, butter (room temperature) and coconut flakes. Beating it with a mixer - we get the crumbs.

2. To take a round shape with a side (diameter 26 cm). If you have skirting removed, vystelit baking paper first, to latch the side and butter. To pour out the crumbs and press them well with your fingers. Place in oven and bake 15 minutes at 180°C.

3. During this time, make curd-coconut mass. Coconut milk, cottage cheese, 150 g sugar, 2 eggs and protein beat with a mixer. Pour it on a slightly cooled cake and put in the oven for 65 minutes at 160 degrees.

5. 100 ml of water and 120 g of sugar to boil in a saucepan. Add the gooseberries and boil. (I think if you take the other berries, for example strawberries, it should be easy to spread on the cake and then pour already prescription ready to fill). Pachechku fill (powder) mixed with 100 ml of water and add to the gooseberry. And again bring to boil. Then it all spread on cake, putting a side that this weight does not leak.

Who can't get ready for a powder fill, can make it himself. It will not be so transparent, but I think the taste will not change. Instead of powder you need to add 2 tbsp of potato starch. I must say that she did not try, I read on the Internet, because I use only this powder.
