Eclairs with cottage cheese-cranberry cream
I admit I was making eclairs for the first time. The third time it happened. But I do not regret that spent so much time. It's so delicious...

Ingredients

  • Water

  • Berry sauce

Start with the dough (I nailed it the third time). Water, butter, pinch of salt and 1 teaspoon of sugar, put on fire and stir, bring to a boil.

As our mixture of oil and water is boiling, add the flour. I poured all at once and quickly stirred with a whisk to avoid lumps. Poured out the flour, reduce the heat and less than two minutes stir the batter so that no lumps remain and remove from heat. (the dough recipe was written by gradually blending in the flour and stir with a wooden spatula, but I did the dough with lumps, the result had to be redone)

While the dough cools, preheat the oven to 200-250 degrees. (accordingly, depends on your oven). And prepare the baking pan: grease it with a small amount of butter and sprinkle a little flour.

Then the dough put on baking tray with a spoon (or syringe, I didn't have one). And put in oven for 15-20 minutes at a temperature of 200-250 deg. (in the recipe to have 200, but my oven is old, so the 250 had to) in order for the popovers have risen and have become a Golden color. Then reduce the temperature to 150 degrees and keep the eclairs in the oven for another 15-20 minutes for them to dry.

Then proceed to the preparation of the filling. Mix curd with 5 teaspoons of sugar, sour cream and cranberry sauce.
