Cake
Black Forest. Very chocolate, very gently and very tasty! My recipe, the author, although the idea from a Japanese pastry chef, but the whole changed me because prepared cake based on our available products.

Ingredients

  • Butter

    120 g

  • Dark chocolate

    400 g

  • Water

    100 ml

  • Chicken egg

    8 piece

  • Almonds

    130 g

  • Crackers

    3 Tbsp

  • Cream

    600 ml

  • Powdered sugar

    4 Tbsp

  • Vanilla

    1 g

  • Cherry

    250 g

  • Cognac

    3 Tbsp

  • Cocoa powder

    1 Tbsp

  • Sugar

    200 g

Cooking

Biscuit. Separate the whites from the yolks. Place in a pot of chocolate (200 grams), oil, and water (100 ml) and heat over low heat until dissolution of all components, stirring constantly. Remove from heat, cool slightly and enter one yolks, stirring well each time.

In a separate container, beat egg whites with sugar and introduce them in two steps in the chocolate-yolk mass.

Gently add breadcrumbs, mixed with almond flour.

Distribute the weight evenly across the whole pan, covered with baking paper. Bake in pre-heated to 180 degrees C oven until cooked (dry kindling). Cool completely and cut into 2 Korzh.

Syrup. Mix the cognac with 70 ml of cherry juice (which we have kept from cherry in its own juice). Cream Popsicle. 600 ml cream beat with powdered sugar. To postpone 200 gr. and place in the refrigerator. Chocolate 200 gr. melt on a steam bath, allow to cool and combine with whipped cream (400 gr).

Assembly. Place the cake in a culinary frame. To impregnate well with syrup.

Evenly cover the chocolate cream Popsicle. Top covered cherries and lightly press it into the cream.

Cover with the second Korzh, to impregnate with syrup and grease pending cream (200 gr.)

Place in the refrigerator and give a good freeze. Cut into 12 portions.

Before serving, cover with cocoa, decorate with cherry and mint leaves.
