Cooking

step-0
In 110 ml of warm water add a couple of pinches of sugar and a pinch of salt, 8 g of raw yeast. Sift flour, mix with water.
step-1
Knead the dough. Put in a warm place for 30-60 minutes.
step-2
Fry the meat until Golden brown on both sides (until tender), spread on a plate.
step-3
Fry bacon (diced), onion (half rings), garlic (cut into large pieces). When the onions become translucent, add the wine and cranberries (grind with a blender).
step-4
I, unfortunately, did not have cranberries, so I added cranberry sauce. The taste of it was not very rich, so I added more.
step-5
Add water and cream, Bay leaf and a few peppercorns, salt to taste, mix well. I suggest to taste the sauce and adjust to your taste. You may want to add more wine, cranberries, cream or diluted with water. I wrote a ratio of approximately, because everything is always add "by eye".
step-6
Put in sauce pieces of meat, cover and leave to cook in the sauce for about 30-40 minutes.
step-7
Meanwhile, get the dough, divide into 2 parts and SkyTeam each part into a ball.
step-8
A pot of water it is better to put in advance. If you have a steamer, then you're in luck :) I had the pan-Mantovani. Mantovano lubricating oil. When the water boils, spread on manawaru the dough balls. Close the lid and "cook" for 5 minutes on high heat and then 20 on average. During this time the cover is not open! CAUTION: steam is very hot, be careful when you open the lid!
step-9
My pan was not very tight, and steam poured from every crevice, had to wrap up :)
step-10
Ready-made dumplings :) the Dough has increased about 1.5 times.
step-11
Dumplings cut and generously cover with the sauce, put the meat. I meat fell even cranberry sauce (which is store bought) extra. When cooking watch out for the sauce, I have it was thick, had to be diluted with water that the taste is not affected.
