Stuffed blue
I wanted last night to surprise my husband with something original. Well, here is the result of my labors: eggplants stuffed with potato and minced meat with cheese and tomatoes. It was very satisfying and delicious!

Ingredients

  • Eggplant

    7 piece

  • Minced meat

    500 g

  • Potatoes

    5 piece

  • Onion

    2 piece

  • Cheese

    200 g

  • Chicken egg

    3 piece

  • Tomato

    600 g

  • Spices

  • Sour cream

    200 ml

  • Water

    300 ml

  • Sunflower oil

    50 ml

My eggplant is cleared from the "tails" make the neckline as pictured and a tea spoon carefully remove the pulp.

We lower our eggplants for 5 minutes in salted boiling water.

Remove eggplant, drain the water and leave to cool; boil potatoes in the peel (a little nedoveriem), allow to cool and clean; cut onion into small pieces; minced meat I had prepared in advance.

Send the meat on a heated pan with oil, fry slightly (1-2 minutes) and add the onions, salt, pepper, seasonings to taste; sauté another 5 minutes and set aside to cool.

While the meat cools, on a coarse grater grate our potatoes,

Add in the slightly cooled potatoes to the mince, stir until smooth and add grated on a coarse grater cheese.

Add eggs and knead again until smooth.

Stuff the stuffing our eggplants, spread on top tomato slices.

Prepare the sauce: remaining tomatoes RUB on a grater, add sour cream,

Mix thoroughly, add hot boiled water, a little salt, pepper and spices.

Fill our the "submarine" and put them in the oven for 1 hour. Since my dish without a cover, I covered it for half an hour with foil and then took it off.

And in an hour that's what happened.

And immediately on the plate to remove the sample. It turned out so yummy... Well, and my husband was surprised, happy and most importantly well fed!
