I wanted last night to surprise my husband with something original. Well, here is the result of my labors: eggplants stuffed with potato and minced meat with cheese and tomatoes. It was very satisfying and delicious!

Cooking
My eggplant is cleared from the "tails" make the neckline as pictured and a tea spoon carefully remove the pulp.
We lower our eggplants for 5 minutes in salted boiling water.

Add in the slightly cooled potatoes to the mince, stir until smooth and add grated on a coarse grater cheese.
Add eggs and knead again until smooth.
Stuff the stuffing our eggplants, spread on top tomato slices.
Prepare the sauce: remaining tomatoes RUB on a grater, add sour cream,
Mix thoroughly, add hot boiled water, a little salt, pepper and spices.
Fill our the "submarine" and put them in the oven for 1 hour. Since my dish without a cover, I covered it for half an hour with foil and then took it off.
And in an hour that's what happened.
And immediately on the plate to remove the sample. It turned out so yummy... Well, and my husband was surprised, happy and most importantly well fed!
