Very unique coloration has Estonian kitchen. She was influenced by Russian, Scandinavian and German cuisine. And despite this, it has retained its charm. Basically, the dishes are simple to make from available ingredients in the first place, here popular typical peasant dishes of the mid-19th century. Very often cooked cereals, are widely used dairy products. Still, I want to invite You to enjoy the Estonian pie, once upon a time the recipe for this baking has brought a relative, who 30 years ago established himself in the capital of Estonia. And each time, setting a festive table for her arrival, we certainly bake this pie. And if its cut into small squares, then it is having the unique taste and unusual appearance, even more like brownies than cake.

What is useful to us. I have flour self-raising (that is, with baking powder, so in the biscuit dough I didn't put baking powder, add to the dough was much more airy).
First make dough: we will need about 500g of wheat flour, 200 g butter, 100 g sugar, 1 egg, packet of vanilla sugar or vanilla on the tip of a knife. Thoroughly mix butter, sugar, vanilla, egg, and around 300 grams of flour.
Spread the dough on a floured surface and knead until elastic, adding flour constantly.
Take the form of a 1/2 size baking sheet, cover with parchment paper and spread dough, leveling with your hands or a small rolling pin directly on the form.
Do frequent nakoly a fork and sent in a preheated 200*C oven for 20 minutes, the dough should acquire a light Golden color.
While the basis of our pie is in the oven, prepare the filling: 1 kg of apples, 100 g sugar, 1 tsp cinnamon. Apples are cleaned from skin and seeds and cut into slices, mix with sugar and cinnamon.
And finally, prepare the top sponge layer cake, take: 5 PCs chicken eggs, 6 tbsp sugar, 5 tbsp wheat flour (I have self-raising flour, the baking powder so I decided not to put) 2 tbsp. starch. Egg whisk with sugar in a magnificent mass, add the flour and starch, mix everything carefully.
Take out of oven shortcrust base.
She spread an even layer of Apple filling.
Pour on top of biscuit dough and send it back in the oven for 25-30 minutes (until tender cake, check the match, if the dough does not stick to it, then the cake is ready).
Get a pie, cut into squares or rectangles.
