Spinach Catalan (Espinacas a la catalana)
A very interesting side dish for grilled fish or meat.

Ingredients

  • Spinach

    1 kg

  • Bacon

    100 g

  • Nuts

    100 g

  • Raisins

    100 g

  • Garlic

    2 tooth

  • Salt

  • Black pepper

  • Olive oil

    4 Tbsp

Very well wash the spinach, drain off water and slice. Soak raisins in cold water for 20-30 minutes. Bacon into thin stripes. Clove of garlic finely chopped. In a skillet, in a little olive oil, fry garlic until Golden brown.

Add strips of bacon or bacon, fry a little. Add the raisins. Fry until the raisins swell. Add the pine nuts. Fry for a few minutes.

Then gradually add spinach, stirring constantly from the bottom of the pan, letting it paritsa. Salt, pepper. On a slow fire without a lid continue to simmer until evaporation of water.
