Cooking
Cupcakes can be baked in advance. And the next day, decorate with cream and frosting. Measure out the butter at room temperature and cane sugar (I had Demerara from Mistral). Whisk. Then one by one add eggs and continue beating.
Then add flour, baking powder, milk. Mix well and optionally add raisins or other dried fruits and spices. The dough is put into molds 2/3 full and bake in a preheated 180 degree oven until dry skewers. I have baked in 30 minutes. The finished muffins to cool.
Melt chocolate in microwave or in a water bath. Add butter and cream. Add cream gradually, to desired thickness.
For the cream beat butter room temperature, brown sugar and cheese out of the fridge for 5-7 minutes. Cream to be deposited on the cupcakes from the pastry syringe or spoon in the shape of a cone. Put into the refrigerator.
Holding the bottom of the cupcake, dip the cream in the glaze or over the plate with a spoon to pour a "cap" of cream. Top can be decorated with confectionery sprinkles.
