Cooking
Prepare the dough. Mix the softened butter with 200 g flour. Shape of a quadrangle and set in the fridge for 1 hour.

Prepare the ganache. Melt the chocolate in a water bath or in a microwave oven. Bring to the boil 200 ml of cream. Immediately remove from heat. Pour 1/3 of cream into the melted chocolate, stir with a whisk. Then another third and the remainder of hot cream. Stir until smooth. Pour in cold 100 ml of cream. Mix well, close the bowl with cling film and put in the fridge (allowing to cool completely) for an hour or so on all night. After, whisk on medium speed until fluffy. Don't overdo it.
