Very juicy! Fast! Delicious! A real lifesaver when the zucchini crop was a success. Beautiful, aromatic side dish to meat and fish dishes. But personally I love it as a separate dish with a piece of fresh bread. And cold, this dish is a good vegetable snack.

Cooking
If the squash is Mature, remove the seeds and peel if it is tough. Young zucchini to leave entirely. Zucchini and carrots grate on the Korean grater. Onion cut into half rings.
In vegetable oil in a deep frying pan or skillet sauté the carrots with onions
Tomatoes, bell and hot pepper grind in a blender into a puree.
By sautéing carrots and onions add the tomatoes and pepper, simmer on medium heat for 5 minutes and then add the soy sauce TM Kikkoman.
Put in the casserole the zucchini, all mix well and simmer under a lid for 15 minutes.
If the tomatoes have sour, it is possible to taste, add sugar (no more than 2 tsp), if not enough salt, you can still add the soy sauce, be guided by your taste. Also add the chopped greens, saute for 3 minutes and serve.
A side dish very juicy and flavorful!
