Cooking
Immediately say, that I have a glass with a volume of 250 ml. For the dough: mix the warm water and warm milk, add yeast, sugar and 1 tablespoon flour. Mix up, cover and leave in a warm place for 15-20 minutes or until the formation of the foam cap.
Kneading the dough I started with 300 grams of flour. Mix the flour, salt, cinnamon, zest ( I added orange sugar).
Spinulata to the yeast mixture, add olive oil and pour all into the flour mixture. In the process of kneading add flour as needed. The dough in the end should be soft and slightly sticky, but elastic and well-shaped. It took me 370 grams of flour. The dishes with the dough, cover and leave in a warm place for an hour.
So, the grown dough in half an hour. At this stage I made obmenka.
For the filling: chop the chocolate and dried fruit. If the jam is thick, then heat it in a water bath to a liquid state. And I wanted to add cherry jam. Because cherry and chocolate is a magical combination for many a sweet tooth. Right?!? :)
And so after an hour the dough rose.
On a floured surface roll out the dough into a rectangular formation. Smear the dough with jam, leaving a bit to the edge, sprinkle with chocolate and candied fruit (and cherries). Not missed the mark jams the edge of coat's milk.
Turn the dough roll and cut along.
Moving from the middle to the edges, braid a braid. Watching that during the weaving side with an open filling remained upstairs.
Form the wreath, marking the edge of the spit. Lay the wreath on a baking tray lined with baking paper. Cover and leave for proofing for 20-30 minutes. I'm on the edges of the pan installed jars to put on film. It turned out the canopy, which did not concern products, but securely on all sides to protect from drafts and saveriani.
Preheat the oven t 180-190 degrees. Wreath grease with milk and sprinkle with sugar. Bake in preheated oven for 20-25 minutes or until Browning. As seen in the photo, the filling not emerged.
The finished wreath put on the grate, covered with a cloth and allow to cool.
