Cake
Continuing to get rid of squash crops, found in "the bins" recipe for chocolate cake, but! not simple, but with zucchini. Of course, once in the kitchen :) a Little added off the cuff - I love coconut. It turned out tender, juicy chocolate cake with coconut cream and airy cake using zucchini. I advise you to try. My home have not seen the cooking process and of course had no clue that it has ZUCCHINI. Here is the Surprise! )

  • Vegetable oil

    160 ml

  • Cocoa powder

  • Dark chocolate

  • Cream cheese

    350 g

  • Lemon juice

    2 tsp

  • Vanilla sugar

    8 g

  • Cream

  • Coconut shavings

Cooking

Prepare food on the cake. Form take 22 cm in diameter.

Zucchini wash, peel and grate on a coarse grater. Allow to stand for 10 min and remove carefully from liquid. Chocolate melt in a water bath or the microwave. Mix the flour with cocoa, baking powder, salt and cinnamon.

Egg whisk, gradually adding sugar and vanilla sugar for 10 minutes until fluffy mass.

Still whisking, add the vegetable oil and melted chocolate.

Add in the egg chocolate mixture grated and pressed zucchini, mix well from the bottom up. Introduced several times over the flour mixture. The batter is thicker than for pancakes. Preheat the oven to 180 degrees. The form laid parchment paper or coat with rust. oil. Pour the batter into the pan and bake at 180 degrees for about 40 minutes (time depends on the oven, thickness of shape is, therefore, guided by the fact that the cake is ready when it jabbing a knife or a match to fail).

Whisk the cream cheese with the lemon juice and vanilla sugar. (If not cream cheese, it is possible to replace the soft cheese with cream).

Gradually, continuing to whisk, introduce the cooled egg-milk mixture.

Separately whisk the cream and carefully mix the resulting mass. The cream is ready. You can send for 15 min in the fridge

Collect the cake: on the bottom layer of the cake spread half of the cream, cover with the second cake layer and spread remaining cream. Trimming of cakes grind them and sprinkle the cake top and side. Added to the decoration of grated white and dark chocolate (little scraps I had :) ). Thought to add decoration fruits/berries, but I considered it would be superfluous, and there look to your taste. Sent for 2-3 hours in the refrigerator, the ideal course for the night, but we so long never worth it.
