Cooking
1. Whisk the eggs with a small pinch of salt with a mixer until white. Then gradually add the sugar and beat for 5 minutes. The mixture should thicken until soft peaks form and increase in volume 2 times.
2. Mix the flour with the baking powder and the vanilla extract, sifted. Beat in with a spoon the flour into the egg mixture. Then knead the dough with a mixer. The dough should get as pancakes.
3. For this baking it is better to take a small mold for cupcake. Molds do NOT lubricating oil. I have these little molds didn't and I adapted small glasses with THICK walls. That's when useful old utensils. And best of all take molds under candy. Spread the dough 1 teaspoon without slides in the mold.
4. Bake in a well preheated oven, until a t 180-190 C for 10-12 minutes. After 10 minutes, check with a wooden toothpick. Allow the cupcakes to cool. Molds cupcake is removed well. And for drinks, take a teaspoon, holding the edge of the cupcake and remove.
5. Prepare the rum Pouring. Mix water (1 l) sugar (350 grams), add the zest (0.5 lemon), cinnamon stick (1 PC) and star anise (1 PC). Lemon juice can be added to taste (0.5 lemon). Cook for 10 minutes. Filter the syrup.
6. Pure syrup bring to a boil, pour in the rum (100 -125 ml) and again allow to boil.
7. Sterilized jars filled mini-cupcakes 2/3 of the volume. I got 4 bottles of 0.5 l
8. Carefully fill cans to top with hot syrup
9. roll boiled lids and roll.
10. Allow banks to cool off. Cupcakes "drunk" syrup, will increase in size and will fill the whole jar. They need to be stored in a cool dark place and preferably in the fridge.
11. Serves rum cupcakes with rum syrup for tea or coffee, you can serve with berries, fruit, whipped cream or ice cream. Bon appetit!
