Zhur village
Jour - a Belarusian soup based on oat straw CEI. Can be meatless and with meat or landline - ham, smoked bacon. Peculiar. Sour. But very tasty!

Ingredients

  • Oat flakes

    1 cup

  • Water

    0.5 l

  • Onion

    1 piece

  • Fat

    100 g

  • Salt

  • Cumin

To cook oatmeal zeju. For this cereal (oats) grind in a coffee grinder or pound in a mortar.

Pour the crushed cereal with warm boiled water and leave for souring it in a warm place for at least a day. Better to do it in ceramic ware, in extreme cases, enamel.

The solution should acquire a sour taste and smell, pleasant. Not to the contrary. Strain the resulting "ZIU" through the screen, carefully separating the coarse solid fraction.

Onion cut into cubes.

Smoked brisket or bacon cut into small pieces.

Melt the bacon in a skillet and fry in it the onion until zolotisty.

In the strained oat solution add a fried onion, a small pinch of crushed cumin and boil. Season with salt to taste. Jour ready!
