Description
The combination of quince with the meat to be extremely successful - to look nondescript, hard as a rock, tart impossibly quince, it has such a gorgeous aroma and a pleasant sour note that his presence can make any dish exquisitely aristocratic. Add black lentils gives this dish a special charm, and a delicate creamy sauce with pesto combines all tastes. This dish will look great as during family dinner, and on the holiday table.

Cooking
Boil in unsalted water black lentils for 15 minutes. The ratio of water 1:2. Excess water is drained.
Meat grind in a meat grinder with large holes, or finely finely chop.
The quinces cut in half and spoon remove the pulp, leaving a wall thickness of 1-2 cm
Finely chop the onion and the pulp from one quince. You can reduce the amount of meat and grind both quince.
Mix the minced meat, boiled lentils, onions, quince and chopped parsley. Add salt and spices. I added lemon pepper and a little coriander
Tightly filled with stuffing each quince, cut a bit of the bottom to be sustainable, and put the stuffed quince in the form. Put in hot oven and bake for 20 minutes at T 220 degrees.
Meantime, finely grate the Parmesan and mix with cream or sour cream.
Get in shape with quince, pour directly on top of mincemeat a little water, and then for each quince with a spoon to put cream and cheese sauce. To reduce T the oven to 180 degrees and bake for another 20 minutes. Several times during the cooking time should put the quinces with the separated juice.
I recommend to serve this dish with a sauce prepared pesto sauce (2 tbsp.) mix with cream (100 ml). Pour the sauce on the bottom of each plate, in the centre put a stuffed quinces. If the ready-made pesto sauce, you can cook it myself, chopped in a blender the Basil, pine nuts, Parmesan and olive oil. You can prepare a replacement for cream in a blender with the herbs, the sauce is ready salt them a bit.
