Buckwheat bread with pear and nuts
Delicious, fragrant, moist crumb, unusual and most importantly, healthy bread. With two types of flour, grains buckwheat, nuts, raisins and pear.

Ingredients

  • Flour

    350 g

  • Sugar

    2 Tbsp

  • Salt

    1 tsp

  • Vegetable oil

    2 Tbsp

  • Pear

    2 piece

  • Walnuts

    0.5 cup

  • Raisins

    0.5 cup

  • Yeast

    1 pack

  • Water

    320 ml

  • Buckwheat

    200 g

Cooking

Soak 100g of buckwheat in boiling water of 100 ml at 2 hours, until all water is absorbed.

Pear peel and grate on a coarse grater.

The remaining 100 g of buckwheat grind in a coffee grinder to produce flour.

In a large bowl mix two kinds of flour, add a pear.

Pour water, add salt, sugar, yeast.

Knead the dough (it will be sticky), add grain buckwheat and vegetable oil.

Knead the dough and leave to rise in a warm place for 1 hour.

Rinse the raisins. Nuts are coarsely chopped.

Add raisins and nuts to the dough approached and simmer for 1 hour.

Approaching divide the dough into 2 parts. One part flatten into a pancake and begin to form a bag. First one side of the wrap, forming the triangle.

They do the same with the other side.

And that's it.

Turn the dough seam side down and slightly correct.

We've got 2 pears. Leave to rise for 30 minutes.

Paper cut stencil.

Place the stencil on the bread and sprinkle with flour.

Gently remove the stencil.

Laterally, make small incisions.

Bake at 190 degrees. I do so: on the bottom of the oven put a baking pan – it may burn, but after landing bread in the oven pouring a glass of boiling water and immediately close the oven door. As soon as the dough begins to brown, remaining pairs need to remove to get the pan with remaining water and briefly ventilate the oven.
