Cake
Chocolate Yule log is a classic, sponge cake roll with a variety of creams. I love chocolate ganache, and especially like the swirls on the cake! Try it, I think you will like it!!!

Ingredients

  • Chicken egg

  • Cocoa powder

    3 Tbsp

  • Yolk egg

    5 piece

  • Sugar

    100 g

  • Cream

    250 ml

  • Dark chocolate

    250 g

  • Cocoa powder

    2.5 Tbsp

  • Water

    50 ml

  • Water

    60 ml

  • Sugar

    65 g

  • Cognac

    1 Tbsp

  • Flavor

    0.2 tsp

Cooking

Prepare the ganache. Cream of heat

5 egg yolks beat

When the cream starts to boil, remove from heat and pour a little into the yolks, stirring constantly with a whisk

Pour the yolk mixture in a thin stream back into the saucepan

Cook until thickened on low heat

Chocolate break in a bowl, pour in the thickened yolk mass

Stir until the chocolate melts

2,5 tbsp Cocoa + 100 ml water + sugar to melt

Mixture with cocoa pour in the mixture hungry, mix, put into the refrigerator for 2 hours

Prepare the syrup:water + sugar+cognac bring to a boil. Remove from heat add brandy and flavoring

Prepare the sponge cake. Separate the yolks from the whites. Yolks + 6 tbsp sugar beat until white. Proteins beat until resistant peaks+ 6 tbsp sugar

In the yolks put half of the protein, cocoa, gently stir with a spatula.

Pour into pan ( I had baking paper), pour over a little oil ( butter)

Bake for 25 minutes at 190 gr

When the ganache hardens, our grease-soaked sponge cake, and twist the roll, if there are rough edges, not terrible, on top of the ganache fixes everything. Cut 2 of the circle roll, lubricates the bottom of the ganache, and fasten to the roll, bitches will be lubricated from the top of the loaf with ganache, with a fork make the structure of the tree ( slightly hold in the ganache). 1 hour in the cold
