Afar, or Lezgin cakes with greens
For my first recipe picked this family for me Lezgin dish. Many Caucasus Nations have something similar, but they differ in composition. This recipe is quite affordable in terms of ingredients: you use your favorite greens, varying the salinity and amount of sour and bitter greens (sorrel, rhubarb, onions) to complement the cheese or not. To start, thoroughly rinse and dry the greens. While greens are drying, knead the dough. Pour the yogurt into the bowl, gradually stirring slowly, add the flour, soda, salt. Add required quantity of water. The consistency - dense to the touch - as for the dumplings. Cover with film and leave to walk.

Washed and dried greens finely chop. Pour into a deep bowl. Add the cottage cheese. As already mentioned, this ingredient is optional. At home we do with him, and without him, depending on the amount of greenery, the presence of curd and desire. But it turns out more interesting, juicier and more familiar to guests. Add the butter, this time I put quite a bit (I had cottage cheese sufficiently viscous and small), but supplemented olive leaves so fragrant. Put the salt. Recommend filling to try: enough salt, oil. Moreover, this stuffing, if it remains after cooking afar, can be eaten separately as a salad. About the benefits of all the ingredients, no need to rant.

Turn to rolling. As for the shape, I chose the form of pasties. It's more convenient, faster, and it turns out the individual portions. My mom unrolls a large oval, equal to sheet from the oven and bakes, pre-coat the sheet with oil. I bake in the pan and therefore divide the formed dough sausage into 9-10 equal portions, rolled out the resulting small circle (be sure to sprinkle the table with flour). The thickness of the dough as the familiar pita.

Gently even out the surface of the afar. When the AESA is ready for baking, put a pan with thick (can be medium thickness) walls on medium heat, grease the surface with vegetable oil. Bake long: about 1.5-2 minutes on each side until light blush. Do not overcook minced - otherwise the dough will be dry. If the filling was not enough, from the balance test, you can make pita bread. Ready hot afar can be lubricated with butter to give softness to the dough, but it is optional.

I note that the greens in the baking time do not have time "to cook" remains fresh, juicy and healthy. The dough can be prepared without yogurt, replacing it with water, however, the dough will be slightly drier, but the result will not change dramatically.
