Risotto with squid
Kalamarakia pilafi. On our website there are 4 meals with that name. But I still want to offer You the option from the well-known chef Vilma Liacouras Chantiles.

Ingredients

  • Figure

    120 g

  • Squid

    250 g

  • Olive oil

    2 Tbsp

  • Garlic

    2 tooth

  • Dry white wine

    2 Tbsp

  • Tomato

    1 piece

  • Soy sauce

    4 Tbsp

  • Greens

  • Water

    1 cup

  • Black pepper

  • Vegetable oil

    2 tsp

Our ingredients are.

Squid cut into rings. In a pan heat the olive oil. Put calamari and sliced garlic. Fry for 5 minutes, Pour the wine and 2 tbsp of soy sauce. Put the tomatoes. Cover and simmer over low fire until squid are tender. ( Approximately 30 min)transfer to a baking dish.

In the same pan heat vegetable oil and fry it, constantly stirring the rice until it is dark. Then put the rice on top of the squid. Sprinkle the top with parsley, rosemary and pepper.

In hot water add remaining soy sauce, pour in the rice (water should rise above the rice by about 2-3 cm ). Close the lid or foil and place in oven heated to t= 180 min, about 30-40 minutes the Rice should be soft.
