Pumpkin muffins with cranberries
Brought here a pumpkin from the garden:) been thinking to try pumpkin muffins, and now gathered. At the same time stand for your judgment, for the contest "Sweet autumn".

Ingredients

  • Pumpkin

    250 g

  • Butter

    100 g

  • Brown sugar

    100 g

  • Chicken egg

    1 piece

  • Flour

    200 g

  • Vanilla sugar

    1 pack

  • Cinnamon

    0.25 tsp

  • Leavening agent

    0.5 pack

  • Cranberries

    1 handful

  • Corn flakes

    3 handful

  • Powdered sugar

To start preparing pumpkin puree. I did it in the microwave. Cut a piece of pumpkin and put in micro for 5 minutes. Cool and then spoon scraped with sandpaper.

Butter warm to room temperature and whisk with sugar, add the egg, pumpkin puree, flour, baking powder, vanilla sugar, cinnamon. Mix everything together, and it turns out creamy smooth dough. At the very end add a handful of cranberries, I got frozen.

Since I have no moulds for small cupcakes, I had put the dough on a baking sheet. On top of corn flakes I try to spread rose petals. Better to stick them more often than I do, because during baking the dough will disperse, and the petals disperse, and it will be difficult to guess that this is rose :)) that is exactly what happened with me :) the Cupcakes sprinkle a little powdered sugar.
