Chicken with apricots
Every year around this time, we are inundated with fresh apricots. And each time I tell myself I need to make the chicken with apricots. Instead, we make apricot jam, apricot pie, or just eat them. Ingredients

  • Chicken breast

    800 g

  • Apricot

    400 g

  • Broth

    2 cup

  • Sugar

    2 Tbsp

  • Vinegar

    3 Tbsp

  • Olive oil

    2 Tbsp

  • Butter

    2 Tbsp

  • Onion

    1 piece

  • Tabasco

    2 Tbsp

  • Rosemary

    1 tsp

  • Cinnamon

    1 tsp

  • Salt

  • Black pepper

Break the apricots in half, remove the seeds, place in a bowl. Add the sugar and vinegar, stir. Let stand, zamarinuetsya, while we do all the rest.

Chicken Breasts cut into small pieces.

Place in a large frying pan 1 tbsp butter and 1 tbsp olive oil, preheat on medium heat. Put the chicken pieces in the pan. Fry chunks until Golden brown on both sides.

While fried chicken, add 2/3 of the apricot juice, which they gave, put in a blender and grind to a puree.

Once the chicken is ready, add salt, remove from the pan into a Cup and leave on time.

Add the remaining oil to the pan and fry on it chopped onion until Golden.

When the onions become slightly brown, add chicken broth.

Then put the apricot puree into the pan with chicken broth and onions. Add cinnamon (I add), rosemary and Tabasco to taste. Add salt to taste. Bring to a boil, then reduce heat and simmer for 10-20 minutes.

I usually ready the sauce filtered through a sieve (but I don't like pieces of onions), and then again poured into the pan, then put the chicken with the remaining apricots, boil for 5 minutes. Very tasty with rice!
