Soba with mushrooms and carrots
A great dish to lean the table that wants to enjoy and he who does not fast). Soba - noodles made of buckwheat flour. At worst it can be replaced just spaghetti, but it's better to find buckwheat noodles, because it has a very pleasant taste. Preparing this dish quickly, and it turns out very tasty!

To prepare this aromatic dish will need a small set of products - mushrooms, carrots (1 big size), soy sauce, honey, rice vinegar, soba and sunflower refined oil for frying.

First you need to cut and prepare all the food. Since the heat treatment process will go quickly. Scrape the carrots and cut into fine strips (or as they call this cutting - Julien). If you have a shredder for the carrots in Korean, you can take advantage of it.

While you're cutting vegetables, you can boil the soba (buckwheat noodles). The cooking time indicated on the packaging. Soba noodles are boiled like regular pasta, approximately 7 minutes. Drain the water and drain the soba in a colander.

Prepare the sauce for the filling of noodles with mushrooms. To do this in a bowl, mix rice vinegar, soy sauce and honey. All carefully stir. If honey is too thick, it can slightly melt in a water bath.

Proceed to roasting. First, fry the carrots with the addition of vegetable oil on high heat, stir periodically. Fry for about 3-4 minutes. Remove the carrots from the pan.

Then to the mushrooms add the carrots and pour the prepared sauce. Fire reduce to medium and cook 30 seconds, stirring.

Next to the carrots and mushrooms add the soba and mix well. Warm up in the pan all together for about 1 minute.

Serve noodles on plates. Sprinkle with sesame seeds. Sesame seeds can be pre-fry. Optionally decorate with leeks or green onions.
