Rabbit
The term "stifado" comes from the Greek method of cooking in which meat is subjected to prolonged heat treatment. This dish is braised in red wine and balsamic sauce, the rabbit meat. Very gentle, diet and with a wonderful sauce!

  • Tomatoes in own juice

  • Mushrooms

  • Tomato paste

    1 Tbsp

  • Dry red wine

    300 ml

  • Vinegar

    60 ml

  • Rosemary

    1 tsp

  • Spices

  • Olive oil

  • Sugar

    2 Tbsp

For this recipe the needed heat-resistant ware (pots, baking dish). To begin with, that turn on to heat up the oven to 180 degrees. Rabbit wash, dry and cut into pieces. Fry in the grill on each side in a little olive oil until Golden brown. Extract.

In the same clay pot, add sliced onion half rings (1 PC), mushrooms (150 g) 2 tbsp. of sugar, fry over medium heat, stirring constantly, until tender onions.

Add 250 g of tomatoes in own juice, mash them with a fork. Then add 1 tbsp of tomato paste, 300 ml wine 60 ml balsamic vinegar, salt, pepper, and 1 tsp rosemary. To bring everything to a boil.

To the sauce add the rabbit meat, the grill cover and place in oven for 1.5-2 hours. It is important that the lid fits tight, otherwise the sauce will boil.
