Wild duck (Teal) in Khanty-Mansiysky Little wild duck (Teal) baked with vegetables and fruit. This is a very tasty, healthy and hearty dish! Your men, and if they are still hunters will like for sure!!!

Cooking
Carcasses of wild ducks to handle, to cut, wash and soak for a couple of hours to mineral soda water (this process is on the camera I took). Then, to get out of the water for our ducks, with a napkin to remove the excess moisture, RUB the carcass with salt and freshly ground pepper. Apples cut into strips or small cubes, season with salt and pepper and baste them with lemon juice. Let stand (5-10 minutes). Stuff our ducks apples, adding to the middle a few Mandarin slices.
Our apples do not fall from the ducks, we are not close, and close a plate of bacon and fasten with toothpicks.
Vegetables: eggplant, carrots, zucchini - cut into large pieces, salt, pepper, sprinkle with vinegar (and lemon; I added the apples remaining after stuffing our ducks) and leave for a few minutes.
Cut slices bacon or fatback.
Baking pan cover with foil and first layer - the base (bends all the edges). Put the second layer of foil (not the folded edge). In parallel, the second layer, the third stacked (not bending the edges).
Spread on a baking sheet of our ducks. Each duck round pieces of bacon. The ducks spread around the vegetables.
We close our dish with foil - the one where you are our ducks. First, the third layer, then the second. Put in preheated oven (200 degrees) for 20 minutes. After 20 minutes take it out and turns the layers of foil to make a "basket".
Our ducks pour the resulting juice and not closing more foil - put back in the oven. Diminish gas. It should also be put in the oven a bowl of water. Every 5 minutes take out the ducks and the resulting juice (do this 3-4 times), until the duck will not become Golden. Chirkov pierce with a toothpick - juice without blood - ready means.
Ducks take out, spread on a dish, sprinkle with lemon juice and decorate with greens and roasted vegetables. Bon appetit!
