Baguettes with bran kvass
I bought wheat flour with bran and decided to bake bread. And besides, I wanted to use store-bought bread kvass. But such prescriptions were not, and I came up with my recipe. For those who can't get flour with bran, it is possible to do the usual, and brew whatever as long as it was natural fermentation, without any chemicals (for residents of Kiev suggest the Lviv barrel in plastic bottles). Do not judge strictly, I really tried

Ingredients

  • Brew

    250 ml

  • Yeast

    1.5 tsp

  • Salt

    1 tsp

  • Sugar

    2 tsp

  • Olive oil

    1 Tbsp

  • Flour

    150 g

  • Rye flour

    150 g

Unfortunately, for family reasons did not do step by step photos of making the dough. But it's just. Brew a little heat, dissolve in it the yeast and sugar. Separately, mix both kinds of flour and salt, pour kvass, add the olive oil and knead the dough, it is pretty solid. Cover and leave to rise in 2 times (if anyone needs I have 2 hours come)

To make cuts and leave for proofing. Then time won't tell, because I baked these baguettes husband (I went for a walk with my daughter, and gave him valuable guidance). Well, maybe 30-40 minutes proofing was. So to bake: heat the oven to 220 degrees. (warm up good), then reduce the temperature to 180-200 degrees. (in my oven it's between digits 3 and 4) and bake for 35 minutes until crisp
