Cooking
Prepare the minced meat to cook. You can take 500 - 600 gr. Well suited mixed minced beef+pork
Onions and potatoes clean and rinse. Finely chop the onion, potatoes grate. You can of course and without potatoes, but we like him. Juicier and softer.
In skillet, heat butter with vegetable (turns out it tastes better when mixed plums. and Rast. oil), onion, a little salt and pepper. Fry the onions until soft over medium heat, stirring occasionally.
While onion is fried a loaf or simply bread (white) separated from the peel and cut into cubes, prepare the right amount of milk.
Fold the cooked bread in a bowl and pour the milk.
Detachable white from the yolk. In a Cup of cooked ground beef add fried onions (along with oil, which were roasted), egg yolk, grated potatoes, bread (you can squeeze a little milk, although I do not like it when juicier!), salt and pepper to taste. All very good stir. And be sure to thoroughly beats on the table, thereby expelling the air from the meat. When the beef is well-batted it becomes smooth and homogeneous and while cooking the patties do not break.
Egg whites with a mixer, beat in cool foam. (This is done in a clean, dry Cup to the well-whipped). Check: when you turn the Cup with foam, protein foam should not drain from the Cup.
Protein foam added into the cutlet mass and gently but thoroughly mixed, recapture is not necessary.
From ready-minced meat formed patties and coat them in flour. You can roll them in breadcrumbs and even in bread crumbs (for the crust of bread grind in a blender) - also very tasty. In a skillet heat sink.+Rast. oil. From cakes to shake off excess flour (otherwise it can burn) and place it in the pan. Fry until it will turn brown on both sides. Then add a bit of water and cook until ready under the lid (i.e., a little steamed). In General, it can be done in the oven on the baking tray in the microwave and even in a coat cooking. I'm doing this in another pan, put in the adjacent pan, the finished batch of cutlets and steamed.
Turn out very tasty, soft meatballs. Bon appetit!
