Kebab in a pancake envelope
Offer to cook the kebab and serve it with the traditional pita bread, and unusual variant in the envelope of pancake, with lettuce, vegetables and pickled onions, spicy tomato sauce.

Pre-marinate the onions. Chop the onion rings, beets into thin slices, put in glass dish, alternating (layer of the onion – 1-2 slices of beet – layer onion ... etc). Pour the vinegar with water. After a couple of hours it's ready! Can be made in advance and stored in the refrigerator for several days, pulling the required amount. In advance, prepare the pancakes. I did the usual: milk, flour, egg, 1 tbsp oil, slaked soda, salt. But I have to admit that a little mistake with the size of pancakes. If the diameter were a little bigger, it would be easier to wrap. Next time I will consider!

Cook the beef for shish-kebabs. Pass through a meat grinder, add salt, black pepper, chopped fresh herbs. Now the mince should be well mixed and beat. Then put in some time in the fridge.

Actually, there are three main rules when cooking kebab: 1. the meat should be fatty 2. the meat should be very well knead and beat (the meat will become tough and dense) 3. the meat should be well chilled. Due to this, the meat will be firmly on skewers and not fall apart.
