I want to say that the set of products can be changed according to your desire and taste preferences. You can add the fish or meat, for example chicken or pork. You can also add sausage. But the rice... the rice is better to take varieties Arborio
So, let's begin. A pan with a thick bottom, heat and add olive oil. Shrimp seasoned with pepper and salt and fry on high heat about 2 minutes until they are browned on one side. Then spread on a plate and set aside
Add the rice to the pan and cook, stirring, 2 minutes.
Add tomato paste, paprika, chopped garlic and a pinch of saffron. Cook, stirring, about 1 minute, until the rice is browned.
Add broth or water and bring to a boil. Cook about 10 minutes, until the rice has absorbed half the liquid.
Then reduce the heat to low and cook about 8 minutes, until the rice is tender and liquid is absorbed completely.
Then on top of rice put the squid and shrimp, cover and cook on low heat for about 2 minutes. Ready paella served in the pan.
