Duck breast with sauce of raspberry and currant
Amazing combination of tender duck breast with a sauce of summer berries... It's worth a try! Always thought cooked duck can be tasted only in the restaurant..

Ingredients

  • Breast of duck

    1 piece

  • Salt

  • Black pepper

  • Raspberry

    50 g

  • Red currants

    50 g

  • Black currants

    50 g

  • Semi-dry red wine

    50 ml

  • Sugar

    2 Tbsp

  • Corn starch

    1 Tbsp

  • Cinnamon

    0.25 tsp

Cooking

Berries to sort, wash, dry with a cloth. A few raspberries and red currants sprigs to postpone for decoration. Black and red currants through a sieve

Squeezed juice put on fire, add wine, sugar and cinnamon, stir and bring to a boil. Starch diluted in 2 tbsp cold water and enter, carefully stirring the sauce.

Then add raspberries, stir and cook 1 min. Remove from heat.

Duck breast wash, dry with paper towel and cut into very thin slices (~1cm thick). Put the pieces on a Board and chop it well using the cling film.

Chopped meat salt and pepper to taste, you can sprinkle dried herbs.

Reheat in a pan with 1 tbsp oil. Prepared meat portions 6-8 pieces and fry for 2 mins on each side. Meat should be lightly browned. Fried meat tightly wrapped in foil. Remaining in the pan juice from the duck add in the berry sauce and bring to a boil.

Serve with any side dish of your choice, the meat is amazingly tender, juicy, berry sauce - magic-fragrant! Very tasty, Bon appetite!
