Cooking
Dried apricots and prunes pour boiling water for 10 minutes. Drain the water, half dried fruits grind in a blender, half - chop with a knife. Rinse pork loin under cold water, dry on paper towels. Cut in half lengthwise, like a book. Well RUB a mixture of pepper and salt. Half of the meat layer put the dried fruit, chopped greens.
Preheat the oven to 200 C. Cover with second half of meat, tie with cooking string or silicone ties, wrap in two layers of foil and place on the grill. At the bottom, place the baking sheet in case will drip juice. Bake the meat in preheated oven for 1.5 hours.
For the sauce, orange juice with pulp, bring to boil, add the flour, remove from heat and stir well. Add the mustard (my home). Cool and run the sauce in a blender.
10-15 minutes before the meat is cooked carefully open the foil on top (do not remove completely). Brush the top and sides of meat a small amount of sauce and bake the pork until crust. If desired, the lubrication procedure can be repeated again.
Now to the sauce add the honey and stir again. Amount of honey depends on the sweetness of the orange.
After baking, let the meat cool slightly, remove the skin. Cut the meat into serving pieces.
