Jam made from citrus peel
Very tasty and original solution of citrus peel which we usually throw away. The Idea Of Pierre Herme.

Ingredients

  • Orange zest

  • Pepper white

    10 piece

  • Star anise

    1 piece

  • Cinnamon

    1 piece

  • Vanilla sugar

    1 tsp

  • Lemon juice

    4 Tbsp

  • Water

    1 l

  • Sugar

    500 g

Citrus wash, dry.

When all the peel will turn into "beads", fill them with water, put on the gas and let the water boil. Boil for five minutes. Drain the water. Repeat the procedure 3-4 times. This will take the bitterness out of the peel. After pour water, add sugar, lemon juice and all the spices. Sometimes (if you have one on hand) I add ginger root. Cook over low heat for at least 2 hours. Ready jam jam cool a little, remove the thread.
