Mushroom pickle
This year in our area a bumper crop of mushrooms. So I decided to feed their loved ones of mushroom soup. The number of products per 2.5 liters of water, but our family likes thick soups.

Ingredients

  • Mushrooms

    650 g

  • Onion

    1 piece

  • Carrots

    1 piece

  • Pearl barley

    35 g

  • Pickled cucumber

    2 piece

  • Celery root

    30 g

  • Salt

  • Black pepper

  • Bay leaf

    2 piece

  • Greens

  • Sour cream

  • Vegetable oil

Cooking

The products that we need. Barley I pre-soaked overnight and then boiled for 30 min.

Fry in vegetable oil finely chopped onion, then add chopped mushrooms, small mushrooms I don't cut. Fry until almost full boiling liquid.

Carrots grate on medium grater, celery cut into cubes. Fry in vegetable oil carrots until tender, then add celery and heat all together for 5-7 minutes.

Cucumbers grate on a coarse grater, priusquam in a minimum amount of water for 10 minutes on low heat.

Boil water in a pan, put the mushrooms, carrots, cook for 10 minutes, add the prepared pearl barley, peeled and diced potatoes, cook for 10 minutes. Then add the cucumbers, sprinkle with salt and pepper, put a Bay leaf, pour the remaining brine from the cucumbers (as required - depending on the desired sharpness and "thickness" of the soup). Warmed on low heat for 5 minutes. Give the infusion for 15 minutes.
