Fast pizza with grilled vegetables
Pizza on the wheat tortilla, the type of tortilla is much faster than a traditional pizza, because we don't spend time for preparation of the dough. But it is no less delicious because the main character here are the seasonal vegetables - eggplant and zucchini - marinated and grilled.

Ingredients

  • Soy sauce

For cooking you will need a young zucchini and eggplant (half of each), clean them is not necessary, enough only to rinse and dry.

Cut the zucchini and eggplant slices, with a thickness of about 5-7 mm. Onions cut thin rings. Clean the garlic.

In a bowl in which to marinate the vegetables, grate the garlic clove, add the soy sauce TM Kikkoman, balsamic vinegar, vegetable oil and black pepper, mix everything. For marinating I used a container with a screw lid, so the container with the marinade I closed and properly shook up. Put in the marinade the slices of zucchini and eggplant and onion rings. Close the lid of the container, agitate that the marinade fully covers the vegetables. Leave the vegetables to marinate for 10-15 minutes at room t, occasionally shaking the container.

Until the vegetables are marinated, preheat the oven t 205-215 degrees. The pan dimmed with baking paper. Also set to heat up the grill pan on the stove on a high heat. The pan is not greased with oil, because the marinade already has oil. Spread zucchini and eggplant on a hot grill pan (without the marinade) and fry on both sides until the appearance of a charming stripes. Vegetables are not to bring to full readiness in the oven they cook completely.

Remove the grilled vegetables from the pan, you can assemble the pizza for baking. For the base I used whole-grain flour tortillas.

We spread the scones on the prepared baking sheet, generously grease it with ketchup or any tomato sauce. On top sprinkle with mozzarella, grated on a fine grater. Further rings of marinated onions, spread on top of zucchini, eggplant and tomatoes, cut into slices. I laid out the vegetables slightly overlapping, alternating between them. Fill the pizza semi-hard cheese type Russian (the amount of cheese to taste). Sprinkle top of pizza with a small amount of vegetable oil. Put the pan in the oven for 10-15 minutes or until cooked pizzas. During this time the cheese melted, but the bread should not burn at the edges.

The finished dish sprinkle with fresh parsley and serve immediately to the table.
