COWBOY CAVIAR. This delicious salad is simple and available ingredients can be considered quite generic; it's perfect for picnics, as an accompaniment to meat, fish or poultry. The combination of all the ingredients in the salad and sauce filling to it very harmoniously! Why the salad is called "cowboy caviar"? It is believed that the name was given to the salad immediately, but only after several years after its appearance, when it was served to the guests of the hotel "The Driskill". Someone joked, comparing the chopped salad with delicious black caviar, saying that perhaps it's her harsh cowboy option! The joke caught on and the name "cowboy caviar" (or "Texas caviar") stuck in a recipe. There are variants of this svetskogo salad, we liked it in this combination... part of the "caviar" includes two kinds of beans — "black eyes" and black beans (which can be replaced by red)! PS the cooking Time are subject to klejenia salad!

Cooking
First, prepare the beans. Prescription are invited to take a ready-made canned, but I was in a dry form that is required of "black" beans and beans "black eye"! Add in a bowl all the other vegetables, chopped coriander and mix gently.
For salad dressing: thoroughly mix to a condition emulsii all the ingredients - olive oil, white wine vinegar, salt, sugar, chili... (recipe is a lot of sugar for a specified amount of products, I fit perfectly 1 tbsp with "slide". You can try on your taste!)
Top the salad with the received sauce dressing, mix well, cover with a lid (or foil) and put into the refrigerator for 1 hour.
