These muffins baked for the first time. Actually vegetable muffins bake often, but with spinach... don't know this vegetable, no reviews. My husband bought instead of lettuce, bag of spinach. So was born the recipe. Muffins came out perfect, not a lush, really. But they were so delicious, why is it with the taste of fried potatoes. Vanished, like seeds. Perfect for soup or broth, or as a lunch to school or work.

Cooking
Onion cut into cubes. From pepper to remove the white membrane and seeds. Cut into cubes.
In skillet, heat 1 tbsp vegetable oil Oleina
Fry first the onion for 3 minutes, to prevent any Browning, then pepper, simmer for another 3 minutes.
Add the finely chopped spinach
Add green peas, salt. Simmer until the mixture of the spinach is reduced by half. Cool.
Sift the flour with the baking powder.
Mix the flour, 1 tbsp oil, the cooled vegetables. Get motley viscous dough
Put the dough in molds. Bake in a preheated 180 degree oven for 25-30 minutes.
