Cooking
First cook the rice. It can be prepared in advance and kept in the refrigerator. For this rice (I used brown rice company Mistral) wash in cold water, give water to drain and put in a deep pan where you previously melted the butter. Mix well the rice with oil. Then add salt (to taste) and water in the ratio 1:2 (per Cup of rice take 2 cups of water). Close the lid and cook on low heat until complete evaporation of water.
Peel shrimps. To obzharit in a large pan in olive oil for 1 minute on each side. Transfer to a plate.
With orange to remove the zest and cloves to clear it of the films.
Put in pan with orange zest, chopped green onions, raisins and almonds. Fry for 2 minutes.
Add the rice and shrimp, salt and pepper to taste, stir and cook 3 minutes.
For the sauce: mix the yogurt, oil, lemon juice, salt, cumin, chopped garlic and chilli.
When serving put on top of the pieces apennina. Serve with sauce.
