Cooking
The dish is cooked very quickly, so all products it is better to prepare in advance: cut onion into half rings, olives in half, tomatoes - diced, cod into large pieces, grate the zest of, oranges, peel and divide into segments and remove membrane. You can use canned tomatoes instead of fresh, 800-850 ml.
In a large skillet, heat olive oil over medium heat. Add the onion and sauté for 5 minutes until soft.
Add the olives, orange zest, orange slices, tomatoes, salt and pepper.
Close the lid and stew for 10 minutes.
After this time, lay on top of the fish.
With a spoon cover the fish with sauce. Cover and simmer for another 7 minutes until the fish is cooked.
