Very simple and tasty recipe for squid. Despite the fact that the time of heat treatment - not 2-3 mins, squid always turn out soft, not rubbery. Repeatedly prepared for feasts on the job. I invite you to try.

Cooking
Carcass squid to defrost, rinse in cool water and cut into small strips. Put all in a bowl.
Add to sliced squid with salt, pepper, coriander (whole and ground). Optional - balsamic sauce (not necessarily, that's why I didn't specify in the ingredients list). Mix well.
Heat in a pan large diameter oil (sunflower or olive), to put the prepared squid. Cook over high heat without lid until liquid is evaporated. Then stir and cover with a lid, the fire to reduce. Fry a little more. If squid a lot, you may need to stir again to fry the largest possible number of pieces.
While frying the squid, wash and chop the parsley.
To the fried calamari add sour cream, mix well. Wait until the evaporated liquid, if it is separated from the cream.
In the end, add the parsley and garlic (suggest to add the garlic at the end, since experience shows that if you pour in the beginning, it all very strongly sticks to the pan. Stew under the lid for another 1-2 minutes.
Serve hot tastes best with potatoes puree. Although tasty and cold as a separate dish. Bon appetit!
