Description

Tilapia with corn salsa
The tilapia are sometimes called "St. Peter's fish". It is believed that Peter, a former profession as a fisherman, caught is tilapia. It is believed that tilapia was called so by Aristotle himself. According to legend, when he tried fish for the first time, exclaimed: "what a pity that tilapia!" ("What a pity that far the fish!") It is something incredible!!! The salsa is so yummy! Loved it all: son-in-law, husband, me)))

Cooking

step-0
Fillet drizzle with 1 tbsp olive oil both sides, salt and pepper, optional sprinkle with seasoning for fish. Leave to stand for 15-20 minutes.
step-1
Recipe: in a deep frying pan to boil a Cup of water, submerge the fillets and cook over a very low heat for 5-7 minutes. I cooked the fillets in the steamer. And 2 fillet wrapped in parchment,
step-2
And the remaining two were prepared simply on the grill. Decided to test how it will taste better.
step-3
While cooking the fish, prepare the salsa.
step-4
In a bowl, combine all the ingredients for the filling: 2 tbsp olive oil, vinegar, chopped parsley, oregano (I have oregano was found, and I replaced it with fresh tarragon and I was right!) and very finely chopped garlic and red pepper. All lightly whisk. The amount of vinegar can be reduced if you do not like too spicy food, so do not pour all at once.
step-5
Then add to the dressing the chopped pepper,
step-6
Beans at which fluid flushed (rinsed beans do not need)
step-7
And corn without liquid. Add chopped green onions and mix well. Salsa is ready. I must say that at first it seemed to us, one hundred and salsa too spicy, but then, with hot fish and potatoes all fall and we decided that the amount of vinegar to reduce not worth it.
