Dorado in foil on a bed of vegetables
After work sometimes you just do not have the strength (and desire) to cook something very complex, and they want to dine and escape from the kitchen. My experiment with the Dorado are well suited to this situation, the time it took quite a bit, and the result was a pleasant surprise. Fish meat, though a bit dense, but very tender, and very few bones. For dinner last night was the first time I prepared this wonderful fish in foil on a bed of vegetables, turned gently and very fragrant, and even garnish!

Ingredients

  • Fish

    2 piece

  • Lemon

    1 piece

  • Eggplant

    1 piece

  • Pepper

    1 piece

  • Tomato

    1 piece

  • Onion

    1 piece

  • Zucchini

    1 piece

  • Olive oil

  • Parsley

    1 coup

  • Salt

  • Allspice

Cooking

The fish is cleaned of scale, gut, wash and blot with a paper towel. Fish make slits with a depth of half a centimeter - so that the fish cooked evenly.

RUB inside and out with salt and pepper. A thin ring of lemon spread on our fish.

Now prepare the vegetables. Eggplant and zucchini peeled and cut into thin strips. Tomato, onion - half rings. All the vegetables are spread in a well-heated pan with a little olive oil. Fry over high heat about three minutes. Add the finely chopped parsley, salt, pepper.

On the foil lay out the vegetables along with the juice, which they gave during the roast, and on top of the fish.

Wrap the fish tightly in foil and place in oven preheated to 180C. Bake for about 20 minutes. Then uncover the foil and another 10 minutes or until Golden brown.
