Chudu with cottage cheese and greens
I offer you a dish of Dagestan kitchen "miracle". This time I have a stuffing of herbs and cheese, but other options are possible toppings. For example, meat, potatoes, and even pumpkin! Dagestan is famous for its multi-nationality and each nation has its own characteristics of this dish! So for example, in Dargin in the stuffing add the nuts, and Lezgins call "aparar". Preparing the "miracle" in a special oven Saji, but in the absence of such a furnace would be a regular frying pan.

In a bowl sift flour. Add salt, pour water and vegetable oil. Knead the dough. And covered with polyethylene. Allowed to rest 20 minutes.
While the dough rests, make filling. In a bowl send cheese and add to it the baking soda.
With a pestle grind the cheese with soda.
Chop the greens and put to the curd. About the greens: it can be anything! Spinach, cilantro, mint, sorrel, nettles, chickweed, young beet tops, green onions and garlic. All a matter of taste and availability in season! If the grass is spicy, then put it smaller, and if neutral, then more.
Now our stuffing salt and RUB well with cheese.
The stuffing is ready and go back to the dough. Divide it into 14 pieces. The size of each piece with a ball for table tennis. The resulting "balls" covered with polythene and allow to stand for 5-10 minutes.
Table grease with vegetable oil (not too heavily). Take one of the balls and roll out round thin flatbread. If You are a novice cook and can't roll out a perfect circle, then cut the edge of the layer on the plate of the corresponding size.
Now on one half of the tortillas put 1 dessert spoon of the filling and spread evenly, stepping back from the edge of 1cm.
Then fold the tortilla in half, covering the second half of the dough stuffing.

The pan should not heat until you can't make a certain number of workpieces.
When blanks gave you preheat the pan. Grease or pour oil is not necessary! Fry on dry, hot pan!
Qualify "miracle" rather quickly. Literally two minutes on each side. Appeared rosy spots means it's time to flip to the second side.
At the time, while frying the first batch, time is needed to sculpt the following "tudeski". If they don't, they can first stick all the blanks, and then proceed to frying. And so the first "miracle" is fried on both sides. Remove them onto a plate and grease with butter. I prefer to do it with a piece of butter, and some Housewives prefer to pour the melted butter.
Thus fry all the "miracle" and put them in a pile on top of each other. Don't forget every butter.
