Cooking
In a Cup mix the soy sauce, sugar, 50 grams of pineapple, grated ginger and garlic, chilli and black pepper. Marinate in this mixture the breast, leave for 30 minutes.
In skillet, heat oil. Marinated breast, remove from the marinade and blot with paper towels. Sear the breast on both sides until Golden brown, about 2 minutes on each side. Put the breast in a baking dish, pour the remaining marinade. Preheat the oven to 200C. To cook the duck for 15-20 minutes.
Cook the rice according to the instructions on the package.
Then the breast is removed, to keep warm. In a pan, where roasted breast, put the remaining diced pineapple, cook 3 minutes. Add the strained marinade. Bring to boil and boil until the state of thickish syrup, about 3-5 minutes on high heat.
