Beetroot soup with ginger
So began this long-awaited summer heat. Want something cool and easy. I want to offer You my fragrant beetroot.

Ingredients

  • Beets

  • Pepper

  • Ginger

  • Lemon juice

  • Cumin

  • Vegetable oil

    2 Tbsp

  • Greens

  • Yogurt

  • Broth

Onions clear, finely chop. Beets cut into small cubes. Pepper cut into thin strips. Ginger root peeled and finely chop. Cumin crushed in a mortar.

In a saucepan pour vegetable oil. I use olive, but we all have our preferences. Arrange the onion, lightly fry. To the onions add the ginger, cumin, and flax seeds. Cook for 1 more minute.

Then put in saucepan beets and pepper, simmer for another 5 minutes. Pour in the vegetable broth. Salt, Yes, bring the boil and cook on moderate heat for 40-45 minutes.

Ready soup is cooled to room temperature. Dressed with lemon juice. Put in the fridge for 1 hour. When serving, sprinkle with greens and dressed with yogurt or sour cream. That was easy, healthy, flavorful soup)
