Description
Translation of the Japanese word “soba” is much closer and znakomie all of us than you can imagine. “Soba” means buckwheat. The same word “soba,” the Japanese call and the noodles made from buckwheat flour. Woody Shiitake mushrooms with an amazing caramel taste-a unique nutritive value of the product. They have a number of medicinal properties, including as relevant in our time, antiviral and anticancer activity. In combination with vegetables, it turns out not worse, than with meat. Very tasty and nutritious!

Cooking
First soak the Shiitake mushrooms in cold boiled water for 45 min (according to instructions). Mushrooms sold in supermarkets in the Department "All for sushi".
Carrots cut into long strips.
Bell pepper also cut into long, thin strips.
I cut the celery. Who does not want or is not able to weigh are two of the stem as in the photo.
Nori also cut into strips. Two sheets as pictured
Grind the garlic through a press, ginger cut into small cubes, optional grate. Chili grind. I have dry pods of Chile, as fresh we have now are not hot
So we prepared the ingredients. Mushrooms have not got into still life.
In salted boiling water boil the noodles 7 minutes, until cooked al dente.
While noodles boil in a pan heat oil, add chilli, garlic and ginger.
Next add the carrots and fry a minute
Then add the bell pepper and celery. Stir.
After a couple minutes add 2 tablespoons of soy sauce "Kikkoman"
And pressed mushrooms with Chinese cabbage
Stir and after a minute remove from heat. To shift to vegetables and noodles to add nori. Stir and leave to stand for a few minutes.
Before serving the noodles and drizzle with the remaining soy sauce
Plates and sprinkle with sesame seeds. Bon appetit!
