Marshmallow recipes on the website already have a particularly great recipe Gostovskogo marshmallow. But I learned to make marshmallows from Alexey (mirsladostey) from another cooking site. This is my first experience with Zephyr in particular and agar-agar at all. The result very much! Is the agar-it's not scary! Zephyr did on the anniversary of my mother. The guests were delighted! And husband and daughter are already waiting for marshmallows, is made exclusively for them with no one to share anymore! :)

Cooking
I had a pack of frozen cherries, pitted weight of 300 grams. Cherry I completely thawed on the sieve, liquid glass and there are exactly 200 grams of cherries. Fill the cherries with a tablespoon of sugar and put on fire. Bring to the boil and cook for 5 minutes.

Alex recommends whisking until t 38-40 degrees. I'm a little this process delayed me, the thermometer showed 36 degrees.
