Dough: For the dough take a bowl that can then be put in the hot oven for a while. Pour milk and water, slightly heated (to "pleasant warmth"). Dissolve the yeast. In a separate bowl mix salt, sugar, vanilla (vanilla sugar), 2 eggs, 2 egg whites (2 yolks put into the fridge). Whisk. Add vegetable oil, carefully mix everything. Combine the mass with milky yeast-based. Pour it in 800 g of flour and gently stir the mixture with a spatula until smooth. In parallel turn on the oven. Next, fill up the dough 200 g flour and begin to knead. From that moment begins the journey of a Lonely Traveler in the unknown distance. Little by little add the flour, knead a soft dough (as they say: up to the consistency of "earlobe"), until you start to lag behind the hands. It is important to catch the balance between liquid, mushy and elastic lump (the ears we are all different!). In the end, I added another 500 g of flour. Here I see the quality thereof! Then cover the pot with a lid, wrap in a towel and put into oven preheated to 180 ºC. Turn off the oven. Leave the dough for 20-25 min. Filling: Meanwhile, wash the apples, peeled, remove the core. We cut large slices and put in the pot. Fill with water, add sugar, put on fire. Note: my apples were sour! 4 tbsp of sugar even seemed a little. For sweet apples 2 tbsp is enough. Try! Water for cooking should be moderately sweet. After boiling, reduce the fire and cook apples 10 minutes (they should be soft). Ready apples turn into a puree with a blender (I have no such widgets - triturated through a sieve. You can tolkushkoy mash). Add to apples 3 tbsp. of cream and 1.5 tsp cinnamon. Stir. Will turn around what is in the photo. After 25 min take the dough out of the oven. Spread on the table and close the dough, "the castle". After 5 minutes turn the dough again and make "lock". After that, roaming the dough back into the bowl and prepare a place for pie. Cover a baking sheet with parchment (I have another foil. Paper is gone. Because - what? How poor to marry - and the night is short!). Sprinkle it with flour. Roll out thin part of the test. Spread on a baking sheet on the form, leaving a little on edge. Then "stuff" the cake with a thin layer. Then roll out the second part of the test. Stuff. I get 3-4 layers of dough usually. Turn on the oven.
