Peel the onion and finely chop. In skillet, heat vegetable oil and fry the onion together with the mince.

Cleaned of seeds and chop the pepper. Put in sauce pan with fried minced meat, the beans and corn.

Add cumin and coriander to taste. Season with salt and pepper. Cover and simmer on low heat for 10-15 minutes.

That is what we will need in the future: our prepared stuffing, and grated cheese.

Preheat a frying pan with butter and put one tortilla. Sprinkle the top with grated cheese.

Spread out evenly the rest of the filling.

Again sprinkle with cheese.

Cover the second tortilla. Fry the quesadilla on both sides until it will turn brown. Warning: do not flip the quesadilla until the cheese is "shipped" stuffing, and then the whole structure will collapse)
